A Twist on Traditional Turkey: Apricot & Cherry Chutney
It’s almost that time of year again – when no other food is quite as appetizing as a well-prepared turkey. With Thanksgiving just around the corner, you may be looking for a way to dress up your main dish. Today, Garden of the Gods Club Executive Sous Chef Carl McCartney shares a delicious apricot and cherry chutney recipe that pairs deliciously with any turkey. If you’re looking for a twist on the traditional Thanksgiving main dish, this recipe will leave you wanting a second helping of turkey.
Apricot & Cherry Chutney
1 Tablespoon peanut or vegetable oil
4 ounces onion, sliced thin
2 tablespoons minced ginger
1/2 cup apple cider vinegar
1 cup orange juice
2 cups water
1 tablespoon lemon juice
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
1/4 teaspoon curry powder
1/4 teaspoon red pepper flakes
1/2 pound dried apricots, chopped
1/2 pound dried cherries
Sauté onions with the ginge,r but don’t brown. Add the remaining ingredients, and simmer for a half hour or until thick. Pair with turkey for a mouth-watering Thanksgiving main dish! This chutney will hold for about two weeks in the refrigerator.
