Potato Gratin: A Yummy Thanksgiving Addition

Even though turkey is the star of the show on Thanksgiving Day, tasting the variety of side dishes and desserts is a treat to which most of us look forward each year. Today, Garden of the Gods Club Executive Sous Chef Carl McCartney shares his recipe for an especially delicious potato gratin. Potato Gratin

1 onion, diced
1 red bell pepper, diced
1 tablespoon garlic, minced
2 pounds Yukon Gold potatoes, sliced very thin
1 cup water
1/2 C asiago cheese, shredded

To create:
Combine the first five ingredients, preferably in a glass casserole dish, and bake at 350 degrees for about one hour.  Top with one-half cup shredded asiago cheese. Bake for an additional 10 minutes or until the cheese is bubbly and brown.
