Jack Daniel’s Pecan Pie

Ingredients:
2 cups whole pecans
½ cup Jack Daniel’s whiskey
1 cup sugar
1 cup dark corn syrup
4 egg
1 tsp. vanilla
2 tbsp melted butter
1 ¼ cup flour
½ cup butter or shortening
1 tsp salt
2 ½ tbsp. ice water

To Create:
Place pecans and Jack Daniel’s inside a resealable plastic bag to soak overnight or for eight hours. Be sure to carefully remove air as much air as possible from the plastic bag before allowing the pecans to soak. After eight hours, drain the pecans and dry them in the oven at about 250°F for approximately 30 minutes. Periodically check the drying pecans to ensure that they do not burn.

Next, mix the salt and flour together in a large mixing bowl. Add the butter, and (using a pastry cutter) cut the butter into the flour until all the flour is coated and the concoction looks like a coarse meal. Next, add the water all at once, and carefully mix until dough forms. Don’t over mix. Place the dough between wax paper or parchment paper, and roll it out to fit a pie tin or pan. After placing the rolled dough into the pie tin or pan, crimp the edges to form a single pie crust. Note: If you are short on time, a store-bought pie crust will do!

Spread the pecans across the bottom of the pie crust. In a separate bowl, mix the sugar, syrup, eggs, and vanilla well. Next, add the melted butter, and mix well. Pour this mixture into the pie pan, over the pecans. Finally, bake the pie at 325°F for about an hour or until the mixture is firm. Allow the pie to cool before serving.
