Delectable Holiday Cookie Recipes: Ginger Snaps and Jelly Cookies

If, like many of us, your mouth waters just thinking about all of the tasty goodies that are offered during the holidays, you will love today’s blog post! To get you in the spirit of the season, Garden of the Gods Club Head Pastry Chef Verna Buhr shares some scrumptious holiday cookie recipes that you and your family won’t be able to resist. Enjoy!

Ginger Snaps

Ingredients:
3 cups flour
2 tsp. baking soda
3 tsp. ginger
½ tsp. cinnamon
1 cup sugar
½ cup molasses
1 egg
1 cup butter
1 drinking glass (to flatten the cookies)
Additional sugar (to dip the glass in before flattening cookies)

To create:
Cream the butter and sugar together until they are very smooth. Add the egg and beat until the mixture is smooth. Add the molasses and the dry ingredients. Mix until the batter is sticky. Using a spoon, scoop the batter into round balls on a clean cookie sheet. Smash each ball with a glass dipped in sugar. Bake the cookies for 12 minutes at 350°F. Let the cookies cool before serving.

Delicious Cookies With Jelly

Ingredients:
¾ cup butter
¾ cup ground hazelnuts
½ cup sugar
1 ½ cups flour
½ tsp. almond extract
Baking parchment paper
Your favorite jelly or jam

To create:
Using a food processor, grind the hazelnuts until they are very fine. Combine the butter, ground hazelnuts, sugar, flour, and extract until the mixture is crumbly. Roll the mixture in between two sheets of baking parchment paper, and cut out rounds (or any other shape that you prefer) in pairs. Cut out a small hole from the middle of one half of the rounds. Bake all rounds for about 10 minutes at 350°F. When the cookies have cooled, spread your favorite jelly or jam on the rounds without holes. Cover the cookies with the holes in powdered sugar, and place them on top of the ones with jelly or jam.
